Originally from the charming town of Virton in Southern Belgium, Guy has spent the past 35 years immersing himself in Australia's vibrant culinary scene. Guy's journey into the world of sake was sparked by a captivating show that detailed a sake brewery's meticulous process of growing rice for optimal quality control. Seven years ago, when the company he worked for began incorporating sake into its offerings, Guy seized the opportunity to delve into extensive educational endeavors to comprehend the intricacies of sake production. With a pedigree in fine dining from Europe and a pivotal role in establishing the Sommelier Association in New South Wales in the early 1990s, Guy recognized the dearth of sake expertise in Australia's culinary landscape. Determined to fill this gap, he embarked on a mission to become a trailblazer in educating others about this Japanese libation. Driven by his passion for sake, Guy has dedicated countless hours to study and exploration, honing his ability to educate patrons on the nuances of sake tasting and its harmonious pairings with diverse cuisines. He has offered tastings and private educational sessions, sharing his wealth of expertise with eager enthusiasts. Sake Sommelier Course Trainer ( Sydney)
Tom Hart, a distinguished figure in Sydney's sake scene whose journey into the world of sake is defined by passion, dedication, and a relentless pursuit of excellence. Tom's fascination with sake began during his tenure in bars and restaurants, where he was first introduced to the nuances of this traditional Japanese beverage. However, it was his pivotal role as the Sake Buyer at The Oak Barrel in Sydney that truly propelled him into the heart of the sake industry. Recognizing the untapped potential of the sake category during the challenging lockdown periods of 2019-20, Tom embarked on a mission to revitalize it. Through his unwavering dedication, he successfully resurrected The Oak Barrel's sake selection, curating nearly 100 different types of sake, shochu, and fruit liqueurs from a diverse network of suppliers. Tom's commitment to sake education extended far beyond the shelves of The Oak Barrel. He organized numerous events and consumer-facing sake trainings, aiming to foster a deeper appreciation for sake among Sydney's beverage enthusiasts. His expertise and contributions to the sake community garnered recognition, leading to his invitation to serve as a Jury member in the prestigious Australian Sake Awards. Tom's discerning palate and industry knowledge were highly valued, further solidifying his reputation as a respected figure in the sake world. Value was further added to Tom's journey when he became a part of the Kodawari sake education team, handpicked by Sandra herself. Driven by his passion for continuous improvement, Tom completed the SSA's Sake Sommelier Course, earning recognition as a certified sake expert. Yet, his journey didn't stop there. Drawing upon his extensive network and deep-rooted connections in Japan, Tom embarked on a new venture to launch his own sake importation company. Collaborating with a Kyushu-based exporter, he endeavors to introduce Australia to the unique flavors of Kyushu sake, alongside a curated selection of shochu and fruit liqueurs. Tom's unwavering dedication to sake education epitomizes the kodawari ethos – a commitment to excellence and continuous improvement in the pursuit of perfecting sake education.
