Sandra Gwee
Known as the “Queen of Sake in Perth”, taking on the challenge of Japanese Sake head-on for WA locals. The survival of a family legacy to keep it alive was her driving force. Taking over Japanese business connections from her family of 40 years and bridging the gap between generations allowed Sandra to honour the partnership that was built up for her.
Promoting Japanese sake to the unknown allowed Sandra to niched into the Sake market with locals, organising special events, degustations, tastings and sake virtual courses allowed her to spread the love of sake to the hearts of Australians no matter the experience.
In 2019 Sandra became an SSA Certified Sake Educator & Scholar recognized by the Sake Education Council & Sake Sommelier Association.
Armoured with the Sake philosophy through her passion to capture the hearts in Perth is Sandra's dedicated mission to educate and spread the enlightenment to the world of Japanese sake to the new generation of sake professionals.
In 2022 September was in charge of presenting the lectures for 70 judges all over Australia for Australian Sake Awards Competition. The judges are made up of professionals who understand the consumers’ needs, such as Australian sommeliers, sake retailers, food and beverage industry professionals, sake qualification holders, and sake importers and wholesalers.

- Understanding Sake: Explore what makes sake unique, including its production methods, ingredients, and key characteristics that distinguish it from other alcoholic beverages.
- Sake Production Part I: Dive into the first part of sake production, covering topics such as rice preparation, fermentation, and the role of yeast in the process.
- Sake Culture: Gain insights into the cultural aspects of sake, including its role in traditional Japanese ceremonies and celebrations.
- Sake Storage and Quality Control: Understand the importance of proper sake storage and quality control practices in restaurants and hospitality establishments.
Afternoon Session:
- Sake Tasting Part 1: Engage in a guided tasting session to explore various styles of sake.
- Develop the ability to understand and interpret sake labels.
- Sake Brewery Storytelling: Learn about the history, ingredients, and production methods of sake through storytelling, connecting with the brands and breweries behind the sake.
- Take time to review the covered content and address any questions or clarifications.

- Sake Tasting Part 2 & Sake Production Part 2: Continue the guided tasting session, exploring additional sake styles and delving deeper into the sake production process. Focus on topics such as yeast starters (Yamahai, Kimoto), sake rice specificity (Yamadanishiki), and the concept of sake regionality.
- Special Sake: Explore unique and special types of sake, understanding their characteristics and taste profiles. Discuss how different factors, such as temperature contrast, can affect the flavour of sake.
- Engage in a hands-on exercise that explores the world of Umami and food matching. Experience sake paired with various foods, including cheese and chocolate, to understand the principles of flavour pairing.
- Students will need to source their own chocolate and cheese
- Unclassified Sake: Learn about sake that does not fall into traditional categories, understanding their unique characteristics and taste profiles.
- Exam : Prepare for the final exam by revisiting key concepts and reviewing the course content.
- Take the final exam, which consists of 40-multiple-choice questions, to assess the knowledge and understanding gained throughout the course. 70% to Pass
